Trinidad Stuffed Breadfruit |

If you have ever tasted breadfruit you will know
that it can be served with almost |
|
any meat, but with beef it has a very
special taste. |
|
INGREDIENTS |
|
1 cup ground beef |
|
1 tbsp allspice |
|
1 small onion, chopped |
|
salt and black pepper to taste |
|
2 tbsps. cooking oil |
|
2 tbsps. tomato paste |
|
¼ cup water |
|
1 breadfruit |

PREPARATION |
|
1. Scoop out heart of breadfruit. |
|
2. Cook ground beef with seasonings, onion and
tomato paste. |
|
3. Drain off excess oil. |
|
4. Stuff breadfruit with mixture, replace
stem and roast in hot oven |
|
425 degrees oF for ½ hour, then reduce heat to 350 degrees
of for another half hour. |
|
5. Test to see if the breadfruit is tender with
fork or skewer. |
