Curried Pork |

Ingredients |
|
1 cup cubed sweet potatoes |
|
1 lb pork cubed |
|
½ cup onion diced |
|
1 tbsp minced ginger root |
|
2 tbsp vegetable oil |
|
1 tbsp soy sauce |
|
½ tsp salt |
|
¼ tsp black pepper |
|
1 cup chicken stock |
|
2 tbsp curry powder |
|

Preparation |

1.
Peel sweet potatoes and cut
into ½ inch slices. |

2.
Heat oil and deep-fry sweet
potatoes until golden. |
|
3.
Heat remaining oil and add
ginger root and onion and stir-fry. |
|
4.
Add pork and brown lightly on
all sides. |
|
5.
Stir in soy sauce, salt and
pepper then add stock and curry powder and bring to a boil. |
|
6.
Add deep fried potatoes and
simmer, covered, until pork is done. |
