Trinidad Curry Plantain Recipe |

A savory and delicious plantain recipe. |

INGREDIENTS |

4-5 ripe Trinidad plantains |
|
Cooking oil |
|
A pinch of salt |
|
3 garlic cloves (chopped finely) |
|
chicken broth |
|
½ tbsp curry powder |

PREPARATION |
|
1. Heat chicken broth in a small saucepan. |
|
2. Add garlic. Let it sit until the plantain is
finished. |
|
3. Peel plantain. Cut into ½ inch slices. |
|
4. Heat 2 inches of oil in a heavy duty frying pan
and add curry powder |
|
5. Fry plantain a little at a time until it is
slightly golden. |
|
6. Remove, drain on paper towels. |
|
7. Take a glass and flatten the plantain. |
